When I’m not photographing weddings and portraits or editing pictures, I love to spend my time experimenting in the kitchen! I recently overcame my fear of cooking with curry and I’m SO glad that I did because this meal has me craving curry for weeks until I make it again. Here is my recipe for Thai Curry Pork. I know it looks like a lot of ingredients but the fragrant, exotic, healthy meal that results is SO completely worth it!
yields: enough for 4 adults
1-1.5lbs of boneless pork loin sliced into small strips for stir fry
2 Tbs olive oil
1 small onion diced
3 cloves of garlic or 1 tsp of garlic powder
1/2 tsp of ground fresh ginger or 1/4 tsp of dry
1/2 tsp black pepper
1/2 tsp ground cardamon
1/2 tsp chili powder
2 cups broccoli florets
1 cup julienned or thinly sliced carrots
1-2 Tbs white vinegar
1/2 to 1 can of coconut milk (optional but HIGHLY recommended)
1 to 3 Tbs curry powder (less if omitting coconut milk)
1 cup Basmati Rice
Heat your olive oil to medium high heat and add diced onions until they start to get transparant. Then add your garlic, ginger, red & black pepper and cardamon. Saute spices for a minute. Add your pork strips and saute for just a minute, tossing the pork to sear it on all sides. Remove seared pork and set aside on a plate. Now add your broccoli, carrots, vinegar, coconut milk and 1 TBS of curry powder and saute until the veggies start to lose firmness (about 5 minutes). When the veggies start to lose firmness, add your pork back in and saute 2-3 more minutes or until the pork is cooked through. At this point, taste your sauce. If you like it spicier, add more curry powder. If you like it more tangy, add more vinegar. If you like it sweeter, add more coconut milk. I use lots of vinegar, a full can of coconut milk and 2 Tbs of curry for mine because I love all the flavors! Serve it over Basmati rice for a wonderful, aromatic, and exotic meal! And just like with my Apple Butter Ham recipe, I was way too hungry to take a picture of the finished meal. But here’s a picture of how good it still looked when I had it for left overs the next day:
